If you have an updated app using iTunes, you could lose older app version, but if you hit update on iOS device, the iTunes will continue to have the older version of that app until you sync. How To Get The Older Version Of An iOS App With iTunes
Back up phase
First of all Navigate to the apps tab
All the downloaded apps from iTunes added to your library automatically, but those app which have been installed on iOS device will be appeared in the iTunes library after the sync process. To view these apps, open up the ‘Apps’ tab.
Find the app you need to back up
In the top right corner search bar, type the app installation file you need to back up. Click on the search result to view the app in iTunes library.
Show in Finder
The moment you get to the required app, just right-click the app icon to get a pop-up menu, and select ‘Show in Finder’ option (in Windows the option is ‘show in Explorer’) to view the app .ipa file.
Now as you know the file location, simply copy that file and then paste it in safe folder, from where you will get access to later on. It may be the best idea to put the .bak extension, so it cannot be unintentionally replaced.
Delete newer version
Delete the new version of app from both the iTunes and iOS device. To delete that app from iTunes, right-click on app’s icon and then click Delete option. To delete from device, tap long on an app icon, and then tap the cross mark on top right corner of the app icon.
Open older file in iTunes
Go to the place where you backed up the old version of app, and then open that file in iTunes.
Sync your iOS device with the iTunes in order to copy the older version of app to your iOS device, but make sure that the app is queued up and ready for an install. The moment the sync process completes, you will find the older version of app on your device home screen.
That is how you would generally back up any app, but what if the iTunes over-writes the older version of app with a new version, and you need the older version app back? Do not get worried, even if the iTunes removes the older version of app with a new .ipa file, you can possibly access and restore that from system recycle bin or Trash.
